Pineapple Salsa

Pineapple Salsa

1/2 cup finely chopped fresh pineapple
1/2 cup diced red bell pepper (I prefer orange)
1/2 cup diced green bell pepper
1 cup frozen corn kernels, thawed
1 can black beans, drained and rinsed
NOT 1/4 cup chopped onions
2 green chile peppers, chopped (Anaheim if you buy fresh)
1/4 cup orange juice
1/4 cup chopped fresh cilantro
1/2 tsp. ground cumin
salt and pepper to taste

In large bowl, toss together all ingredients except for spices.
Season with cumin, salt, and pepper. Cover and chill until ready to serve.
Serve with tortilla chips. Also great on fajitas!!
